Keeping high and dry? It’s been another week of some really odd weather for Oahu, but rain or shine, we will be at the farmers market. As many of our visitors know, we have covered seating with a couple of tents to protect diners from the elements, but maybe bring a windbreaker on your next visit!

Farmers Market Specials -- 2/14 - 17 + New Wave Friday + Happy Lunar New Year!

Happy Valentine’s Day! Or if you’re single and proud of it and want to celebrate with pals, then Happy Pal-entine’s Day! We still have some spaces open for Valentine’s dinner at The Pig & the Lady in Chinatown, as well as Pal-entine’s dinner at Piggy Smalls at Ward Village. All of this is going down tonight!

Aloha! One quick update on the farmers markets this week — The Blaisdell Farmers Market on Wednesday is canceled, so we won’t be there. However, we will be all set up and ready to serve on Thursday, February 1, in Kailua and Saturday morning, February 3 at KCC!

It’s the week leading up to Christmas and we’re still holding our regular farmers market schedule. The Mama Le specials for the week are:

Now, back to Christmas — It’s known that in Japan, KFC chicken is popular during Christmas. Some people say it is because Colonel Sanders has a passing resemblance to Santa Claus or it was an old marketing strategy to align that image with KFC and it just stuck. 

We were inspired by this tradition, and just opened pre-orders of our famous Laotian Fried Chicken aka L.F.C.(pickled chili, fried shallots, roasted peanuts, kaffir lime) for you to enjoy for the holidays. We have all sizes for your needs, a personal meal, bucket size (limited time only), and our catering pans for large parties. Buckets and pans are pre-order only and will end on Friday, 12/22 at 6pm.

The personal meals will only be available at the KCC Farmers Market this Saturday, December 23 from 7:30am-11am. For the L.F.C. bucket, ranging from 12 to 20 pieces, will also be available for pickup on Saturday morning at KCC. 

For catering pans of 20 to 40 pieces, pre-order now and pick up at either location, The Pig and the Lady in Chinatown and Piggy Smalls at Ward.

It’s beginning to look a lot like Christmas, doesn’t it? With the holiday parades, the lights up at Honolulu Hale and this windy, cold weather in Hawaii, it’s truly bringing in that holiday spirit! Farmers Market Specials -- 11/29 - 12/2

Guess who is the big birthday boy this week? It’s Chef Andrew! He’s not particularly big on birthdays, but if you run into him, wish him “Happy Birthday” anyway. Deep down, we know he appreciates the acknowledgement, and our fearless leader sometimes needs to be reminded that it’s okay to celebrate one’s birth! 

Andrew was recently featured in two episodes of the award winning foodie series FAMILY INGREDIENTS. Chef travels back to the motherland with fellow chef and host Ed Kenney, and it looked like a truly amazing experience. Both episodes are available to view online -- Part 1 has Chef Andrew in Saigon (Ho Chi Minh City). In Part 2, he is joined by Mama Le and family as they travel to Hanoi, the birthplace of Mama. 

In the meantime, back to farmers market business — We are on our regular schedule this week and we have some classic, go-to favorites in the Mama Le Specials for the Week, with one new dish that we haven’t done in a long time. THIT BO XAO KHOAI TAY or Stir-fried beef with potatoes is the ultimate comfort food for us Le kids growing up. Think the Vietnamese version of “Lomo Saltado” and you’ll get the idea. It’s literally “meat and potatoes” but in such a savory, scrumptious way that it needs to be eaten with some piping hot rice.

Farmers Market Specials -- 11/1 - 4 + Family Ingredients this Wednesday, HFWF Steamy Bowls & Selbach-Oster Dinner

Part 1 of Chef Andrew’s journey to Vietnam on FAMILY INGREDIENTS airs this Wednesday on PBS Hawai’i at 7:30pm! The episode will focus on Andrew going solo to Ho Chi Minh City (aka Saigon) with Chef Ed Kenney to check out the southern style Pho noodle soup that we are most familiar with in the U.S. Part 2 will air next week at the same time, where Andrew joins Mama Le and family to trek through Hanoi, Mama’s birthplace. 

In addition, Hawaii Food and Wine Festival starts this week and Chef Andrew is part of the 7-Eleven Presents Steamy Bowls this Friday, November 3

Culture and heritage take front stage as seven chefs from diverse backgrounds create dishes that reflect who they are and where they come from. Ramen (Japan / China), rice noodles (Vietnam), and sopa (Mexican) are some of the dishes our chefs will put a spin on. Chung Chow (Noreetuh, NY), Ricardo Zarate (Rosaline, CA), Andrew Le (The Pig & the Lady, HI) are joined by four other star chefs who will share their life experiences and personalities in a bowl. Come looking hot and steamy as you eat, drink and dance the night away with exciting new cocktails shaken and stirred by our mixology masters. Cocktails and beer provided by Southern Glazer's Wine & Spirits Hawaii and Anheuser-Busch. 

Finally, we have SELBACH-OSTER WINEMAKER DINNER on November 13 at 6pm! More info on the dinner here: 

Selbach-Oster can trace wine-growing in the family back to the year 1661. They grow Riesling on 50 acres of steep, south facing mountain slopes that face Germany’s Mosel River. The Selbach-Oster estate vineyards are considered some of the best in all of the Mosel wine country. This special dinner will feature Rieslings that range from Dry to Sweet from some of Johannes’ finest single vineyards. He will also be bringing along some very special library selections from his personal cellar. Don’t miss out on this amazing event!

About Chef Keaka Lee
Chef de Cuisine Keaka Lee became interested in cooking when he was a young boy. His fondest cooking memory was when he would help his grandma gather ingredients from Chinatown and cook gau (Chinese steamed rice pudding) and jook (Chinese rice porridge) for Chinese New Year.

"We would always be racing around before meter would expire," Lee said. "Cooking is an ever changing art that I've grown to love and appreciate. My curiosity is always to learn with endless creativity."

Born and raised in the Waialae-Kahala area, Lee brings a vast amount of culinary experience to The Pig & The Lady. After graduating with a Culinary & Pastry Arts Degree at the Culinary Institute of the Pacific at Kapiolani Community College, he gained experience in Hawaii at 3660 on the Rise and Alan Wong's. He then moved to New York City to work at the award-winning Gramercy Tavern and Untitled & Studio Cafe as their sous chefs. Lee’s heart never left Hawaii, which brought him and his wife back.

Lee's style of cuisine revolves around the community. "Cooking with a seasonal menu of elegant dishes with passion and rustic influences that showcase the restaurants relationships with local farmers & purveyors is what I believe in," he said.

Lee also won gold at the American Culinary Federation Nationals competition with Kapiolani Community College Student Team Hawaii in 2009.

Before we head into farmers market business, I want to highlight an upcoming event that is being spearheaded by our own Chef Keaka Lee and Ho Farms. It’s called
THE HO LEE GRAIL and it’s a collaboration with Keaka and Shin Ho from Ho Farms with a prix fixe dinner on Wednesday, October 25, 6pm at The Pig and the Lady. The menu is still being finalized but it will be a truly fun and eclectic one, sourced with as many produce and ingredients provided by Ho Farms. This past Sunday night at the Hale Aina Awards, we were humbled to win several awards including Gold for Best Oahu Restaurant for the second year in a row! In addition, our second locations, Piggy Smalls, won Silver for Best New Restaurant. All in all, we won a total of 6 awards. The other awards were: Silver for Best Business Lunch, Silver for Best Cocktail, Gold for Best Vietnamese and Top Write-In for Best Catering! The competition was tough, but it just goes to show the expansion of Hawaii's culinary scene is stronger than ever. The Hale Ainas are a constant reminder for us to always excel in what we do. It's good to keep us on our toes. We want to thank our patrons for voting for us. We do it all for you!

Another quick reminder that we recently started serving Weekend Brunch at Piggy Smalls. Have you seen our various videos promoting this new menu? 

Spearheaded by our very own founder Chef Andrew, the brunch, which is served on Saturdays and Sundays from 10:00am - 3pm every weekend, has been a big hit! Knowing Chef, the menu will be malleable and refreshed quite often so come by to check out the new dishes he will be serving for brunch!

As for FARMERS MARKETS, we are on our regular schedule this week. Here are the Mama Le specials: 

MI QUANG —  pork belly, chicken, shrimp, quail egg, lobster balls, aromatic herbs, turmeric noodles

GRILLED PORK BELLY BANH MI — grilled pork belly marinated with mama le’s special recipe

XOI GA — savory sticky rice cooked in chicken broth, topped with poached chicken, ginger scallion sauce, shallots

PORK JOWL WATERMELON SALAD BUN BOWL W/ JAEW — grilled pork jowl marinated in palm sugar & spices, thai jaew sauce

Farmers Market Specials -- 9/13 - 16 + Hale Aina Awards + Happy Birthday, Mama Le!

It is two special occasions for us this week. First off, the 2018 Hale Aina Awards presented by Honolulu Magazine is happening this Sunday at the Royal Hawaiian! We were fortunate and honored to win several awards last year, including Restauranteur of the Year that was shared between Chef Andrew and Mama Le. It was a total surprise and truly an eventful evening that we will never forget. 

This year, we are back and also nominated for the same categories, essentially, including Best New Restaurant for PIGGY SMALLS. We have to admit that the competition is extra tough this year and whoever wins, will totally deserve it, because 2017 has been a stellar year for the restart scene in Hawaii with several high level openings in the past few months. But, whatever the outcome, we are truly humbled to be a part of this community.

Secondly, and more importantly, it is Mama Le’s birthday this Friday! The true boss of this whole operation, Mama Le celebrated a fun dinner at the Blaisdell Farmers Market today with some close friends. She also had sake and beer! Although she is small, she can hold her liquor, which was pretty impressive, especially since she went shopping post-dinner! 

Anyway, if you see our matriarch this week, wish her a happy birthday! We are trying to organize a Vegas trip for her, since she loves to hit the blackjack tables. If anyone has gambled with Mama, she’s got a great strategy, feigning ignorance and asking “beginner” questions with the dealers and players on the table, but she definitely knows what she is doing, and many times, laughing all the way to the bank. Wish her luck because she will definitely bring her frog pin!

BUN MANG VIT — smoked duck, bamboo, shiitake, fresh herbs, shiso, fresh cut noodles

We have wonderful loyal customers who have been with us since the very beginning. They are definitely ohana. Many of these fine folks in the photo above attended our very first pop-up dinner in Kakaako several years ago. They've been our supporters, our champions, volunteers, friends, and ohana in this crazy journey. To us they are considered #PigRoyalty It is always great to re-convene, break bread, and enjoy everyone's wonderful company. Mahalo!

We’ve got a great farmers menu for you this week with some classic, Mama Le favorites that have not been featured for quite some time. First off, we are on our regular farmers market schedule, which you can see here

Hey, farmers market fans! Our head of ops for farmers market, Alex, is on a 48-hour binge in Vegas, celebrating with Chef Brandon, who unfortunately left his post at Piggy Smalls to venture onto his next adventure. I’m sure those guys are having a grand ol’ time, but Alex will be back for farmers markets starting this Wednesday, as we truck along on another regular schedule this week.

Farmers Market Specials -- 7/5 - 9 + Supporting Our Troops with a Free Lunch

Going to keep this blog entry short, so we are just going to cut to the chase — We will be on our regular farmers market schedule this week, including another appearance at the Ala Moana Farmers Market this Sunday. Here’s the schedule below:

Finally, our July 4th festivities aren't over as we celebrate and honor the brave men and women who protect our freedom everyday with our 2nd year serving a free lunch at Kaneohe Bay Marine Corp Base. The farmers market crew will be serving a meal of Laotian Fried Chicken, Pho French Dip Banh Mi, and a very special ice cream sandwich to the first 350 marines and sailors who will get lunch on us! It’s just a small token of our appreciation for these young service men and women.
