The weekend is here! And to cap off this weekend, Andrew has decided to do our breakfast Banh Mi ( Vietnamese Sandwich) for Saturday's KCC market. The Banh Mi is gonna be filled with some delicious breakfast goodness of fried egg & pork pate', marinated tomatoes, pickled farmers market vegetables, garlic butter, topped off with some fresh organic herbs on a toasted bagutte. If you haven't tried it yet, try to make it down. All made to order and recommended to be eaten right away!

Chào poeple of Kailua!

As most of you know, we really are into our stews & curry. When I think of stew, I picture generous chunks of meat, carrots, potatoes. Basically it is something I can eat for breakfast, lunch & dinner. Good taste, comforting & satisfying. Then the kanack attack.. That's the best kind right?

Coming into Mama Le's kitchen this morning, I immediately smelt the wonderful aroma of her "Bo Kho" Vietnamese Stew Noodle soup. The smell of simmering beef brisket, the sight of generous chunks of tendons, and the scent of star anise is really nice to walk into. Todays batch is gonna be a good one. We serve this with noodles or bread and topped with fresh herbs. So if you haven't tried this comforting noodle soup stop by and try some today!

Also today we are adding our new rice dish "Ga Kho Gung". This homey dish is a Chicken Braised in Ginger and Vietnamese spices. Almost a Vietnamese Shoyu Chicken if you will. This dish makes me happy because it is something Mama would always make for lunch for us as kids. The chicken so tender and the ginger sauce all of jasmine rice and a little fresh herbs on the side makes me really content.

Good Morning P&tL fans!

Since last week's debut of Andrew's special "Banh Mi" Vietnamese Sandwiches, we decided to carry it over this week and offer you a totally cool sandwich with the usage of  Beef Tongue! Growing up in the Le's household, we are no stranger to eating Mama's dishes with the usage of "offal." I can always remember Liver, Chicken Hearts, tails, sweetbreads, heads, feet... you name it, as ingredients for Mama's soups, and main dishes. Going to Chinatown with her was always an adventure, especially in the meat markets and seeing all the animal parts and what was garbage to some, was gold to her. There was always a contingency that me and Andy could hold it and play scientist until we got slapped on the head and sent to our rooms, since we were destroying her gold ingredients. This week's Sandwich "Banh Mi & Luoi Bo Nuong" or "Grilled Beef Tongue Sandwich" lets us celebrate one of our favorite pieces of meat. Served grilled, seasoned, and with a Farmer's Market medley of pickled vegetables, Marinated Tomatoes, mustard cabbage & a Vietnamese Miso & Garlic Butter sauce. We hope you like it!

Also this week we are proud ot serve our "Ca Kho To" Caramelized Catch of the Day the "Wahoo" or "Ono" fish. Freshly caught on Tuesday, the fish will be very tasty. This is totally a "home" dish that I would say most Vietnamese families eat regulary during the week. Stuff like Pho, Bun Bo Hue, or something more popular was more of a weekend dish for us. The fish that we usually use is Catfish, but this can be made with pretty much any fish you want. So therefore, we will use what our beautiful Hawaiian Waters can provide for us. Cooked with our homemade Vietnamese Marinade with sauteed Ong Choy and Jasmine rice.

And that's not all..Let's not forget about Mama Le's weekly Noodle Soup! Still the main event to us.. This week she has made her hearty & delicious "Bo Kho" also known as a Vietnamese Beef Stew with Brisket & Tendons, cut rice noodles topped with fresh herbs. This is traditonally served with bread, but noodles are much better in our version. The broth has a hint of star anise which really complements the Meat & Vegetables & herbs. Thank you Mama!

Wow.. As I write this log for this week, I am torn as to what to eat myself. Maybe I'll eat the sandwich and dip it into my Bho Kho... No. no... But the smell of the Carmelized fish is making me want to try that too.. Maybe I'll eat the sandwich first at the market and take the Soup home.. Hmmm.. Quandry.. I really like the whimsical direction Andrew & Mama Le are going with their menu's and if it is going to be like this everyweek, I think the winner's of this good delimma is YOU! our wonderful customers.. Gonna start by wishing everyone a Happy Mother's Day weekend! We have a lot of Mama patrons @ the Pig and we want to especially wish them a nice relaxing weekend. The Pig & the Lady cannot be where it is now without our Mama so we are very thankful for that and gonna give her the weekend off!!... Ok we tried, but of course she would rather work.... :)

Today @ KCC we are going to debut our breakfast version of "Banh Mi". When we were in Vietnam last year, breakfast was a huge event there since everyone there are "early risers" I loved walking around the streets in the morning and seeing the little food carts set up, tents, cauldrons of soups, and the ever so beautiful sound of sizling fried eggs. Almost every morning I would walk into the alley behind my hotel and visit the oldest lady there who was serving breakfast banh mi sandwiches. I'd tell her, "you choose for me." and she would make a chop suey of all my favorite things & just sautee it up. She fried the egg, mixed the pate' and herbs and mash it up in the pan. I watched in amazement because even though it look weird, I knew it was gonna be AWESOME. It did NOT dissapoint and I was left satisfied and wanting more. Well today we are going to try to recreate that experience and add a little of our techniques and share that with you. Our "Banh Mi  Dac Biet" ( Basically means special sandwich) will be made to order, of fried island egg with pork pate, Vietnamese Ham, pickled vegetables, marinated tomatoes, garlic butter on a nice mini baguette. We think you would LOVE this and we cant wait to serve you. We will have only a limited amount so try to come early!  To accomidate this sandwich, we are also proud to have Mama Le's Bun Bo Bue. Brisket, Pork Shank & Hock noodle soup. This one is a winner for the morning.. For rice, we are are serving our weekly classics Sparerib Daikon, Vegetarian Curry & Com Ga Hoi An Salad. Also Papa Le is going to be serving our Vietnamese Iced Coffee, so please give that a try too! It appears we will have some very tasty items to be had, so maybe have a pre Mother's Day meal with us?

Hello Kailua!

We are back this week after a nice little break with some great offerings. For our stew, we are doing ""Cu Cai Nau Xuon" Braised Spare Ribs & Daikon over jasmine rice. This dish is new to Kailua and we think you wil enjoy it! The Daikon is especially fresh and local, so we are excited. For Mama's Soup we are doing her "BUN BO HUE" This is a Kauai raised Brisket Beef, Pork Belly noodle soup with a nice lemon & Pork Hock flavored soup. If you haven't tried, this and like Pho, we also recommend this one! Aloha Pig Nation foodies! This month will mark our 6 month anniversary @ the Farmer's Markets and I must say, we are in over our heads. Even though we only do 3 markets a week, everyday is a prep day for us full of debating, arguing, and the final deliberation of what Mama Le "feels" like doing. Such a diva yeah?  The thought, effort & love that Mama Le & Andrew put into the food is quite remarkable and with all the love from the P&L customers, we are trying to see how we can WOW you. This week we are going back to grass roots and making PORK a focal point. It took us a while but today will be the debut of our first Vietnamese Sandwich "Banh Mi" We are talking about a fancier & tastier Bale sandwhich if you will. Our "Banh Mi Dac Biet" ( Special Vietnamese Sandwhich) has coconut marinated smoked Pork Belly, pickled vegetables, fried garlic butter & our special hoisin pate sauce. YUM!!!!!!!!! We think you will enjoy this one. Also on the menu this week is our yet again "Dac Biet" version of our "Com Ga Hoi An". We have included some nice baked and crispy chicken skin. This addition elevates the flavor and the added texture to the salad will surprise you! For Mama Le's soup, we are doing out classic "Bun Bo Hue" This pork belly/brisket lemon grass noodle soup is a knock out punch of flavor. If Pho is the #1 soup in Vietnam, Bun Bo Hue is a formidable #2! We are also bringing back our "Cu Cai Nau Xuon" our Braised Spareribsd & Daikon with rice this week since it was such a crowd pleaser last week!

TGIF Piggies. Well we rested after this week's crazy week of Mama Le's pop up dinners and our Blaisdell Market. We took Thursday off and have somewhat rested with enough energy to bust out an amazing menu for this Saturday's KCC Farmer's Market. Our pop up dinner went quite well and the Crab Sauce noodle soup "Hu Tieu My Tho" was quite a crowd pleaser, so we are more than happy to serve it to our market customers. If you are dining in, (hint hint) ask for a little extra crab sauce. :) Also new on the menu is Mama Le's classic stew of "Cu cai Nau Xuon" Braised Spareribs & Daikon with jasmine rice. The flavor of the fresh daikon stewed in the Sparerib juices are to die for... This is a must try. Our new dessert this week also is our classic "Che" pronouned (Chae) Che Xam Bao Luong. This is a cold dessert with a medley of Lotus Root & seed, Chinese Dates, dried Longon & Kombu. This is a perfect ending to a savory lunch on a hot day.  Along with the new editions, we have our classic staples of Mama's Farmer's Market Curry, Com Ga Hoi On Chicken Salad, our popular Sticky Rice and appetizers of Tofu and La Lot. Also on top of this Papa Le will be our barista and serve "Cafe Sua Da" Ice Coffees too!

When Chef Andrew started his pop-up, The Pig and the Lady, it immediately became a family affair. As Andrew became popular in the local food scene, so did his main influence, his mother, Mama Le. Paying homage to her, Andrew reserved the 4th course in a 5-course menu, to his mother, who would ignite people's taste buds with traditional, home-cooked Vietnamese dishes. She expanded many people's palates and awareness for Vietnamese cuisine. People soon realized that Vietnamese cuisine is more than just pho, although her pho is a force to be reckon with.

Our first Pop up June 2011

In September of last year right after our 4th menu, Mama Le went to Vietnam with her husband to expand her horizons by enrolling in some cooking courses to refresh her Vietnamese cuisine repertoire. Mama Le was learning quite a bit, from Vietnamese sashimi dishes to roasting a whole suckling pig and she was excited to return to Honolulu and expand her 4th course designation. 

Then, the unpredictable happened -- Mama Le suffered a stroke and was immediately sent to hospital, where she would stay for another month. The whole family flew to Saigon to her bedside. Although she was partially paralyzed, she was making incremental progress everyday. But, Mama Le's hopes were dashed and she fell into depression.

Returning home was a long, arduous road. With the pop-up temporarily closed and the future of The Pig and the Lady on hold, Andrew decided to take a stab at the farmers markets. He was inspired by his recent trip to Vietnam, and eating in various food stands and night markets. He wanted to capture that same feel of the Asian night market but with Mama Le's secret family recipes. 

Slowly but assuredly, The Pig and the Lady at the farmers markets was gaining a following. Although Mama Le was not at the helm, it was 100% Mama Le, with her recipes and home-cooked comfort food goodness. This being a family affair, with siblings Alex and Allison manning the booth and setting up and breaking down tents, Mama slowly became more involved. Hey, it was her recipes, right? 

Her strength and energy was slowly increasing but it was also getting worrisome for the family. She was, AND STILL IS, on a road to recovery, and her forcing herself to stay up late at night to monitor the boiling of soups, stews, and chopping of vegetables, was putting a strain on the family. But, Mama Le was resilient and in a way, cooking for the farmer's markets was her therapy. 

Eventually, some help was hired, and many of the tasks were unburdened from Mama and Andrew, but it is still a family affair, and mom and pop enterprise. Or in this case, mom and son enterprise. Today, The Pig and The Lady lives on at three farmers markets a week. With the pop-up iteration still up in the air, it was about time to do one before it goes to the next stage. And why not do one with Mama Le at the helm?

Thus, we are honored to have a special two night pop-up dinner service with Mama Le's first pop-up menu, and Chef Andrew as sous chef. This time it's "The Lady" who's going to be in front of the "&." 

Come celebrate with us as we celebrate Mama Le and a little taste of what she has cooking in her head. Let me tell you, making a 5 course menu was hard because if she had it her way, it would be somewhere in the neighborhood of 100 courses. Hopefully this is a start of many more to come!

Hello people of Kailua... We know that the town is super excited about the opening of Whole Foods, which is a good thing for the heath conscious foodies of Kailua. However please don't forget the wonderful, hardworking local vendors at the Farmer's market who grind out some good eats and local produce! We really appreciate it! :)

Yesterday @ Blaisdell we had such a wondreful response to one of Mama Le's childhood stews "Poulet au Vin Rouge" . Kind of like a healthier version of "Coq au Vin".. The Poulet Stew is  Chicken stew cooked with red wine... The flavor tastes like you are eating in someone's home in France.. Which is the best kind.. Comforting... We are going to do this again today and we hope you enjoy it! Also we brought back our "Pho Tai Nam" ( Local Brisket & steak noodle soup) for tha classic Vietnamese soup.

So just like every Sunday, I get a phone call from Mama Le throwing ideas about what she wants to serve @ the Farmer's market this week. She usually stresses about it and wants more than she can do. But all her ideas are thoughtfully catered for specific customers she chit chats with at the Market's. If you ever had the pleasure to sit in our tent at our seating area, you will see this tiny old lady with her round hat overseeing the operation like a mini mafia boss. But instead of getting whacked with a canoli, she will use a baguette. Haha all kidding aside..the best part of having her in the tent is she gets to talk to the folks dining in, which she LOVES. She is so down to Earth and easy going I can see how it translates into her cooking. Whatever I do, I CANNOT RUSH her, cause if I do, I might as well end my life... Gotta love Moms....

So for this week's menu..she seems to be on a French phase so I ask her why.. and she told me, while going to school in Vietnam, the international school she went to served these stews such as the Ragout, Burgundy Beef, Coq Au vin, etc... So she is re-creating the lunch menu she had as a child for all of us to enjoy. I think its really cute and I am just here to help her achieve that goal for her customers to enjoy. This week we are serving "Poulet Au Vin Rogue" basically Chicken cooked in Red Wine.. This stew is homey, and very comforting.. In addition, we are making our classic "Pho Tai Nam" The brisket is grass fed from Kauai, so the quality of that bowl with the fresh handcut noodles, will make our bowl stand apart from any restaurant.  Also we are bringing back our " Xoi Ga " savory sticky rice with a steamed chicken, lup cheong, baby shrimps, and a nice fried egg on top. I think a perfect beginning to the meal....Oh and our " Cari Chay" Vegetarian Curry.. We put this on the sidelines from our Blaisdell menu for a few weeks now, so a big sorry to our vegetarian friends! :)

Weekend is here! To end such a hectic week from our promo on KHON, to the Yelp Party yesterday, I'm not gonna lie, poor Andrew and Mama Le are tired.. However to finish off this week, we are serving our tasty menu for KCC tomorrow, and I can assure you the quality is gonna be wonderful.. Just had a sample of the broth Mama made and we are excited to serve it tomorrow! Bun Mang Vit ( duck, herb noodle soup) is very light and aromatic, but the balance with the herbs, bananna blossom and pairing with the ginger fish sauce is remarkable. Also our rice dish "Boeuf Bourguignon " Burgandy Stew with Jasmine Rice & Baguette from our French influenced Mama repetoire was well received from our Wednesday & Thursday offerings from Blaisdell & Kailua. Also to finish off our new menu this week, we are gong to serve our "Xio Ga Lup Xoung" This SAVORY sticky rice dish has all the wonderful topping of steamed chicken, lup cheong, vietnamese ham, fried shallots and Andrew is gonna put a nicely fried egg on top with some french Maggi to finish it. If you havent tried this yet, please do so.. Sticky rice can be an entire lunch!

We also are looking forward to next week's new offerings! But in the meantime, come down to KCC for a wonderful Vietnamese Breakfast!

Good day wonderful people of Kailua and the Windward side. Today we are proud to be featuring our new French inspired Stew," Boeuf Bourguignon" This is a Burgundy Stew with mushrooms, carrots, onions served with Jasmine Rice cooked in red wine. The flavor of the stew is very French, translated through a Vietnamese flair, which is what we like about it. To add to that, we have decided to revisit and serve our "Bun Mang Vit" Duck/Chicken, bamboo, herbs, rice vermicelli noodle soup. The broth itself is very flavorful, but the bamboo shoots are like pieces of meat on its own, so that is something to try if you want to venture deeper into the large repertoire of Mama Le's noodle soup choices.

To complement our 2 new dishes, we are bringing back our "Cari Chay" aka Farmer's Market Vegetarian Curry. The vegetables are all bought @ the Farmer's Market, so we LOVE to support our local farmers. The taste and light spice of Lemon Grass complements the soup and will ensure a nice dinner. We serve this dish with Rice and or a Baguette.

Last week we had a huge success with our "Banh Xeo" Crepes and with that little bit of France, inspired Mama to jog the memory bank of what she ate growing up in Saigon with the French influence of that time. Classic French dishes such as " Cocovan" " Ragout" where a staple on the table, so ths week she decided to unveil her "Boeuf Bourguignon" ( French Burgandy Stew) This hearty stew is slow cooked with short ribs, mushrooms, carrots, celerey,onions.. All cooked with red wine. ( Last week's Ragout Ra-goo was cooked with white wine.) Also with the French theme, we decided to do a duck soup and rotate Mama Le's "Bun Mang Vit" bamboo shoots & duck noodle soup. Since our family are soup people, we LOVE this one since the flavor is so unique compared to soups such as pho, bun bo, that the smell of the bamboo, which is off putting to some, is the main event in this dish. If you liked Mama's soups in the past, trust me. This will be good! As a side dish to noodle soups I've had while in Vietnam, I remember that some noodle shops would pair their soups with Xoi ( pronounced SOY) This is a Vietnamese sticky rice that can be served savory with chicken, pork , ham. etc.. In homage to Viet street food, we are making " Xoi Ga Lap Xoung" ( Soy-ga-lop-suong)  This is a savory sticky rice dish with boiled and very tender chicken, lup cheong ( yes I said it!) and fried baby shrimps, herbs andfrench maggi sauce. This is more like an appetizer but can be eaten as a meal, since the sutle sweet rice, mixed with the texture of the baby dried shrimp, soft chicken and different flavors all balance well.

This past Wednesday we had a very overwhelming response to our Vietnamese savory crepes "Banh Xeo" . For Saturday Andrew is gonna do it again and we are determined to make it even better than the one we had @ Blaisdell. We are adding "Bo Bia"(Jicama) to add better texture to the crepe. We are excited to do it all over again tomorrow!

Chef Senad is re offering his refreshing " Grilled Pork & Watermelon Salad" this time we are smoking Pork Belly so we thinks you all will enjoy it! The lime chili dressing will certainly wake you up tomorrow! Also Senad is gonna make his classic Thai Ice Tea as a nice pairing.

Oh wait. There's still the Lady's ( Mama Le ) contribution. Mama Le is offering her "Hu Tieu Ga Ca"  with organic chicken, Kajiki ( Marlin) and our fresh noodles, herbs.. Also as you already know it is paired with her homeade Pate chaud pork puff pastry. For her rice dish, we are re offering her Pork Ragout ( Ragoo) "Suon Heo No Dau" made with spare ribs, organic peas, carrots, potatoes, onions, made with white wine over jasmine rice & a Baguette.

Today @ Kailua we have some very nice offering to savory, French / Vietnamese dishes. Growing up in the Le house, I can always remember a permanent baguette in the kitchen and Mama Le always had us eat baguette with our eggs, noodles, stews, and not to mention the never ending Vietnamese Banh Mi we HAD to eat.. Poor little Le Pigs yeah? Terrible.. :)

l today we have our wonderful noodle soup "HU TIEU GA CA" This is a Organic Chicken & "Kajiki" Marlin noodle soup with fresh herbs, FRESH hand cut noodles and it will be paired with a wonderful Pate chaud Pork Puff Pastry! Also back for Kailua is our "Son Heo Nau Dau" or aka "Pork Ragout ( Ra-gooo) French Vietnamese Stew. This stew is also paired with rice and a baguette.. Oh and cookeed with white wine to give it that "je ne sais quoi". :)

As you know Andrew went to school @ C.I.A. in New York where he learned his skills and got the experiences from top New York restaurants. There in school he met New York City based Senad Dedic and both of them hit it off immediately and have been close friends since. Senad actually came to Hawaii after he graduated and worked @ "La Mar" @ the Halekulani for a year. He has since travelled around the world and worked in various 5 star restaurants and resorts, honing in his culinary skills. However, he still has a soft spot for Hawaii which he tries to come visit Andrew and his Hawaii friends as much as possible.

This week @ Blaisdell he and Andrew have collaborated on a menu and Senad has contributed on 2 dishes. A wonderful, Pork Jowl Watermelon Salad & Our Thai dessert "Konom Beuang" Thai sweet wafers ( see pic below)   Also on top of this, we have added our very limited run of "Banh Xeo" Savory Vietnamese Crepes & Mama Le's "Hu Tieu Ga" paired with a lovely flakey French Pate chaud ( Pate-sho) pork meat pie. Lots of nice suprises for tomorrow Blaisdell Market!

Happy Easter Week everyone! This week Mama Le has come up with some very comforting classics we piglets get to eat while growing up @ the Le household. Tortureous I know.  We are happy to offer you her version of a French "Ragout " (pronounced Ra-goo) Vietnamese name "Suon Heo Nau Dau" This dish is a classic Vietnamese/ French dish even cooked with a little white wine and served with a french baguette. Also we have to offer our homemade "Pho Ga" with a slow poached egg. So wonderfully comforting and with the perfect creamy egg, makes the broth ( with ZERO MSG) even more memorable. Also as usual we have our staples of " Ca Ri Chay" Vegetarian Curry, and our "Com Ga" Chicken Salad with Chicken broth rice for our regulars.

Tomorrow @ KCC , we are honored to have the COOKING CHANNEL'S Unique Eats come and film us for a island segment they are doing. They made some special requests to the menu, therefore, we have some wonderful and most important even more delicious offerings for tomorrow.
